Adzuki Fruit Cocktail Agar Agar


On a special day in the month of July every year, I turn a year older and wiser. In the younger days, such a day would usually be celebrated with friends. Those were days before we started settling down and having our own family commitments. 

Now, this day is spent with my family, and I have a really precious and wonderful time with my darlings.

This year, I did a very simple yet refreshingly delicious birthday 'cake' for myself. It's totally gluten free! It's an agar agar cake!!

I've quickly gone down to the supermarket to buy the essential ingredients that I needed. With these and sugar that I have at home, the dessert can be made in a jiffy! 

 
You just need some patience while waiting for it to set in the fridge. :)

Adzuki Fruit Cocktail Agar Agar

(recipe below is double the original recipe)

Ingredients:
For the Fruit Cocktail Agar Agar Layer  
250g canned cocktail, drained
1 cup water
2 tsp agar agar powder
6 tbspn sugar
 
For the Adzuki Beans Agar Agar Layer
1 cup water
2 tsp agar agar powder
4 tbspn sugar
400g adzuki beans

Method:
For the Fruit Cocktail Agar Agar Layer
1. Place drained canned cocktail into the molds. Set aside.


2. In a pot, add in water and agar agar powder. Give it a good stir to mix in the agar agar powder.


3. Turn the heat on and add in sugar. 

4. Bring to boil and let it cook for about 3 minutes, stirring continuously.


5. Turn off the heat and pour the mixture over the fruit cocktail. Set aside to cool while we prepare the adzuki beans layer.


For the Adzuki Beans Agar Agar Layer
6. In a pot, add in water and agar agar powder. Give it a good stir to mix in the agar agar powder.


7. Turn the heat on and add in sugar. 

8. Bring to boil and let it cook for about 3 minutes, stirring continuously.


9. Turn off the heat and stir in the adzuki beans till well incorporated. 


Assemble both Layers
10. Ensure the fruit cocktail layer prepared earlier is slightly firm. Spoon the adzuki agar agar mixture over the fruit cocktail layer.




11. Refrigerate for at least 3 hours to let it firm up entirely.

12. Unmold and serve chilled.

13. Enjoy!
