Mee Siam Goreng


The first time I tried dry version of mee siam was many years back at a shop called Tea Shake Hut. It was love at first bite for me. I recalled the plate of yummy fried mee siam will also come with a piece of finger-linking-good chicken wing. This shop is now no more but I still enjoy a plate of fried mee siam or mee siam goreng at other stalls.

I bought a packet of mee siam goreng premix recently and whipped a Quick and Easy Mee Siam Goreng meal for hubby and myself. I would never have thought of making my own mee siam goreng paste from scratch so I'm ever so thankful for such idiot-proof premix packaging.


With this premix paste, everything else is just easy peasy. It's literally just add and fry. That's it! And you get to have delicious home-cooked food ready all under 30 minutes!! It's a cheater's way but I'm not complaining.



Mee Siam Goreng
serves 2

Ingredients:
1 packet mee siam goreng paste (I use Prima brand)
Rice vermicilli (enough for 2 pax), soaked for 15 minutes
2 eggs
Some prawns (I use frozen cooked prawns)
1 onion, chopped
5 cloves of garlic, chopped
Cooking oil for frying
Water

Added when serving
Lime
Chinese chives (for garnishing)

Method:
1. In a wok, frying pan or pot, add some cooking oil (about 1 tbspn), mee siam goreng paste, 1/2 cup water. Stir well and bring to a boil.



2. Add in soaked rice vermicilli and stir-fry well until the sauce from step 1 is well mixed into the rice vermicilli. Scoop out the stir-fried rice vermicilli onto a plate and set aside.




3. In the same wok, frying pan or pot on medium heat, add some cooking oil (about 1 1/2 tbspn). Add chopped onion and garlic and fry till fragrant.  



4. Add in eggs and stir fry slightly.


5. Add in fried rice vermicilli and continue to stir fry till fragrant and well mixed.


6. Add in prawns (plus other ingredients like bean sprouts and tau pok if you desire) and stir fry for about 1 minute till fragrant. Pour 1 tbspn water around the edge of the wok, frying pan or pot and stir fry for another few seconds.



7. Scoop onto serving plates. Squeeze in a lime and sprinkle some chives over the mee siam.

8. Enjoy!



Note:
- I only added in eggs and prawns as I do not have other ingredients in my fridge but feel free to add in other ingredients like tau pok, bean sprouts and if you take chilli, some hot chilli.
